The blanket term “Oyster Mushrooms” tend to encompass several closely-related species. The one I’ve come across the most often is:

Pleurotus ostreatus

Always double-check the spores on these. “True” oysters have a very light lilac sporeprint. Others have white or even light buff sporeprints.
